Il soffritto è un’antica ricetta della cucina napoletana, tanto antica che su alcuni libri ci sono ricette in cui ancora non utilizzavano concentrato di pomodoro e salsa di peperoni. Nata per utilizzare le interiora del maiale, che tra parentesi era l’unica cosa che ai poveri rimaneva dal maiale, viene chiamata anche zuppa forte, questo quando viene servita su pane tostato. Per fare una buona zuppa, basterà solo aggiungere acqua e aggiustarla di sale. Ma sia allungata e messa su pane tostato, che servita così, semplicemente riscaldata e messa sui vermicelli, è veramente insuperabile. Di solito si può comprare nelle macellerie napoletane, dove la vendono già cotta, densa, piccante, aromatizzata. Si conserva per circa una settimana in frigorifero, ma se la mettete bollente in vasetti sterilizzati, potrete conservarla anche per qualche mese. Quando non riesco a trovare quelle di maiale, uso le interiora di agnello e il risultato è sempre ottimo e risulta anche più tenera.
Ingredienti
1 kg e ¾ tra cuore, fegato e polmone più 1 rene di maiale
200 gr di sugna
300 gr di salsa di peperoni dolci
200 gr di concentrato di pomodoro
10 foglie di alloro, 2 rametti di rosmarino e 1 rametto di salvia
½ cucchiaio di salsa di peperoncini piccanti
Sale q.b.
1 pentola di acciaio da 24 cm di diametro.
Per prima cosa, tagliate cuore, fegato, polmone e rene a pezzi di circa 3 cm (o fatelo fare dal macellaio). Mettere il tutto in abbondante acqua e sale per circa ½ ora, questo servirà ad eliminare il sangue e i residui, dopodiché sciacquatelo abbondantemente.
Lasciare scolare bene nel colapasta.
Mettete sul fuoco la pentola con la sugna e lasciate riscaldare, quindi unire cuore, fegato, polmone, rene e un mazzetto ben legato composto da rosmarino e salvia più le foglie di alloro.
Alzare la fiamma e lasciare soffriggere rimestando spesso. Alla fine di questa fase dovrà risultare ben asciutto e privo di acqua.
Aggiungere la salsa di peperoncino, la salsa di peperone e il concentrato di pomodoro, salare poco e abbassate il fuoco a minimo. Solo se necessita unire un poco di acqua calda.
I tempi di cottura non li posso precisare, all’incirca sarà un’ora per i maiale e mezz’ora per l’agnello. Assaggiate per controllare la cottura e la sapidità. Va servito su spaghetti.
NB nel caso non riuscite a reperire la salsa di peperone, potrete usare 2-3 cucchiai di paprica dolce non affumicata. Stesso discorso vale per la salsa di peperoncino piccante, basterà unire ½ cucchiaino di paprica o quanto ne riuscite a tollerare, fate voi!
